Gingerbread House Construction Tips

If you're like me, you may need all the help you can get to create a Gingerbread House that you can be proud of.  I'm crafty and creative, but I'm also impatient and clumsy.  

 

Here are some tips from Gingerbread House Baker extraordinaire, Janet Wade-Utay.  She and her friend Karen McLean have made several of the iconic gingerbread masterpieces that have been displayed as part of the Festival over the years.  The houses pictured below are some of Janet and Karen's creations!

These tips were previously published in Connecticut Magazine as part of Festival publicity in 2019. 

 

1. Start early, take your time, and don’t over-complicate the design.

 

2. If making an original creation with a pattern you created, make it first with cardboard to confirm things fit together.

 

3. If using a kit, make your own royal frosting to assemble the house.

 

4. Use a construction gingerbread dough without leavening, chill the dough flattened in 2-3 pieces and wrapped in plastic.

 

5. Decorate your pieces before assembly so they can be flat. Allow plenty of time to dry!

 

6. Be bold, try new things, simplify, and have fun!

And now for a few cheater tips of my own for those who need to get in and out fast, especially if you're working with young children. 

 

1.  Make a kit your own.  A serrated knife is great for sawing through pieces of hard gingerbread parts.  I've used long expired, clearance sale kits to cut and reassemble into new creations.  

 

2.  The melted sugar technique on youtube for gingerbread assembly really works!  Spread out regular white sugar on a flat bottomed pan over medium heat.  Stir/mix until it becomes liquid, and watch the temperature - it can burn or harden (cool) quickly.  Dip your gingerbread edge and hold in place.  It only takes a few seconds for it to cool and harden.  And, the melted sugar is brown, practically the color of the gingerbread itself!  

 

3.  Love delicate white icing details but find it difficult to master?  Try cookie icing on flat pieces before they are assembled.  Experiment with microwaving it until you get a consistency that will work best for you, and be sure to let it dry completely.  To fill in an area, trace it first and then "flood" it with the icing and it will dry smooth.
